Plantains resemble bananas but are larger and more angular. They have a thick, green or yellowish skin that may turn black as they ripen. The flesh of unripe plantains is firm and starchy, while ripe plantains have softer, sweeter flesh. Plantains are a good source of complex carbohydrates, dietary fiber, vitamins, and minerals. They are particularly high in potassium, vitamin C, and vitamin A. Plantains should be stored at room temperature until ripe. Once ripe, they can be stored in the refrigerator for a few days to prolong their freshness.
